Easy Breakfast Casserole For Holiday Brunch

The holidays are in full swing and we are already in full planning mode for parties and other family gatherings.  I love the holidays because I get to spend so much time with family and friends.  I love seeing the smiles on my kids faces when they open gifts.  I love sitting around laughing and telling jokes with my family.  It’s the best time of the year for me.  It’s also one of the most stressful times of the year as well.

My siblings and I always go to our parent’s home for Christmas.  When there were fewer grandkids we would all spend the night at their house and open gifts there.  Now that our family has grown we started with a new tradition of Christmas brunch and dinner together.  We only open the gifts we brought for each other at our brunch, and together my mom, sisters, and myself make dinner for the family.  It’s filled with amazing memories that we talk about all through the year.

For brunch each of the siblings are responsible for bringing a dish for us to enjoy after opening presents.  I always make my Easy Breakfast Casserole, because the family loves it.  It’s super easy to make and it has all the best parts of breakfast in one dish.  When I make it I always bring orange juice to accompany the dish.  When I’m choosing orange juice I always pick Minute Maid Orange Juice.  I love shopping at Safeway because they have great specials, and I can always find the items I’m looking to purchase.

Safeway had a great sale on the Minute Maid Orange Juices, they were two boxes for six dollars.  I loved that it included both low pulp and no pulp since I refer no pulp in my juices and my huband like to have pulp in his juice.  The good thing about orange juice is that everyone loves it and whatever we don’t use for brunch we can use to make holiday drinks for during dinner.  So it’s a win-win.

While I was at the store I noticed an awesome promotion from Coca-Cola and Shutterfly.  When you purchase four participating Coca-Cola products you earn $20 off at Shutterfly.

Offer will be executed via Catalina print-out at register with unique pin code to redeem online.  The Shutterfly offer is valid through December 28th.

If you’re looking for brunch ideas for the holidays I highly suggest this breakfast casserole.  You can make it ahead of time and refrigrate and bake later.  It’s perfect to make and take for all holiday gatherings.  The leftovers are even better the next day.  Plus you can customize it to make it a dinner casserole as well.  Check out the recipe below.

Getting Ready for Summer Grilling Season at Giant Eagle #SummerofGrilling #CBias

Getting Ready for Summer Grilling Season at Giant Eagle

My husband loves when it starts to get warm outside, that meas grilling season for him.  It’s his favorite time of the year and all he likes to do then is put some burgers and hot-dogs on the grill and hang out with our family and friends.  Our annual family tradition involves celebrating the birthdays of two middle children.  Both my sons and hubby have birthdays in May, the boys birthdays always fall around Memorial Day.  We celebrate by going to a local park, grilling and enjoying time as a family.  We’re ready to start our summer of grilling and we’re shopping Giant Eagle to get us started.

Bacon Wrapped Hot Dogs

Over the weekend my husband and I had to drop my sister to the airport so we decided to head out to Fredrick and stop by the Giant Eagle because they are the headquarters for for everything grilling.

We arrived at the store looking for burgers, but they were all sold out of the burgers we were looking for, so we decided to go with Oscar Mayer Hot Dogs instead.  I was surprised they had meat, beef, and turkey options.  I loved the selection of products they offered at the store.  It was huge and had everything we needed to get us ready for our summer of grilling.

I love a good sale so I couldn’t pass up this bargain of Pepsi’s, for only $10 you get five of the six packs, and the cute emojis on the bottle are so fun.  They had much more options on the soda aisle as well.

Since we ended up having to change from burgers to hot dogs I wanted to try something different and I’d seen other people wrap bacon around their hot dogs so I decided to give it a try and ended up stuffing my with cheese as well.  We were hoping to try this on the grill, however it’s been raining in Baltimore non-stop since last week, so we ended up making ours with out indoor grill.  I’m sure we’ll be making them again once the weather gets nice and hot.

Once you’ve gathered all your ingredients, the first step is to slit the hot dogs down the middle, be careful not to cut them in half completely because you don’t want two halves, just a nice slit to stuff the cheese.

I found it easier to cut the cheese slices into smaller slices so it was easier to put inside the middle of the hot dog.

Stuffing the hot dogs with cheese didn’t take long, and it worked out better as crumbled pieces for me.  Some stayed in the slices but I liked the crumbles as well.

Next step was wrapping the hot dog with bacon.  Depending on how long your strip of bacon is you can easily wrap each hot dog with one strip of bacon.  Wrapping at an angle worked best for me.  Don’t worry if there are a few gaps.

Our hot dogs came out perfect and I of course didn’t want to have them without something cool and refreshing to drink. For an easy side I got some Giant Eagle fries, baked in the oven until they were almost ready, took them out and covered with a few slices of Kraft Natural Cheddar Cheese Slices, making some easy cheesy fries.

I decided to make a Pepsi Slushie to go with our hot dogs for dinner.  To make it’s very easy, take your six pack of Pepsi’s and crack the seal on them slightly letting out some of the fizz.  Shake them up for about 10 seconds and put in the freeze for about 2 to 3 hours.  Once you see ice crystals start to form take out and crack open the bottle, it should start slushing, if not put back in the freezer longer.  Once you’re gotten your desired amount of slush pour into your favorite cup and enjoy.  It’s cool and refreshing and perfect for hot summer days.

Be sure to visit your local Giant Eagle, the grilling headquarters for summer and beyond. With warmer weather on the horizon, what are you summer grilling plans?

School is starting in a little over a week and we’re in full back to school mode.  We’re getting school supplies, adjusting schedules and making all the plans we need to make for school.  Now that school is back in session I’ve been working on stocking up on the essentials I need for school lunches.  It never fails that no matter how much planning I do I always end up running out of something.

crab mac and cheese

We were shopping at Walmart for some of our lunch box essentials for school.  The kids like taking Lunchables the first week of school.  Since we start on a Wednesday this year I figured it was much easier to grab a few of those for the first couple of days.  They have so many different options that I know all the kids are sure to find what they need.  We also always stuck up on juice pouches and fruit snacks.  Did you know that right now Kraft has over 20 printable coupons to help you save not only on back to school lunches and snacks, but lots more as well.  The page is #PackedWithSavings just click on the banner below for coupons.

They offer a wide variety of coupons for everyone in the family.  From coffee to juice pouches, there’s something to help you save while shopping for your favorite products from Kraft.  While shopping I was thinking of dinner and what I wanted to make for the family and I remembered that I wanted to make some Mac and Cheese again since the kids always loves having it for dinner.  I grabbed some Kraft Natural Shredded Cheese, Velveeta Shells and Cheese and Philadelphia Cream Cheese along with our juices and some other items and headed home.  When I got home I wondered about what I could do to make it extra special and then it hit me.  Crab!  Yes we Marylanders love our crab.

The key to any good mac and cheese is a good cheese sauce.  I make sure that I add all my seasoning at the base so my finished dish is perfect.  If you’ve never made cheese sauce from scratch before don’t be discouraged it’s not hard at all and I also have a semi-homemade method that would great as well.  The secret to a good cheese sauce is using the right amount of butter, flour, milk and constant stirring.  For this recipe however I am using my semi-homemade method which is even easier.  I started with butter and cream cheese.  Make sure the cream cheese it at room temperature.

My daughter loves being a helper.  She couldn’t wait to put the cheeses into the sauce and help me stir.  I love using the Kraft Natural Shredded Italian Cheese because I get so much variety and it makes for a very cheesy dish.

When mixing in your crab meat be sure to be as gentle as possible.  You don’t want to break up the crab meat too much.  This the last step before mixing in the macaroni.

I like baking my mac and cheese.  Instead of using cheese on top of this dish I used Italian bread crumbs.  It’s really up to you how you choose to top your mac and cheese.  Now just bake and enjoy.

Crab Mac & Cheese Recipe

2 boxes of Velveeta Shells and Cheese

1 package of Kraft Natural Shredded Italian Cheese

1 12 oz package of Philadelphia Cream Cheese (room temperature)

4-6 tablespoons of margarine or butter

1/4 cup of milk

16 ounces of lump or claw crab meat

1/4 cup Italian Bread Crumbs

  1. Preheat the oven to 350 degrees.  Lightly grease a Pyrex baking dish.
  2. Boil shells according to the directions on the box.  When the shells are ready drain and set aside.  Be careful that you over boil the pasta.
  3. While the shells are boiling melt margarine or butter in a large stock pot.  Mix package of cream cheese and milk in with the melted butter on low heat.  Make sure to constantly stir.
  4. Once the cream cheese and milk is completely combined add in the package of shredded cheese, stirring until melted.  Add the Velveeta Cheese sauce from the shells and cheese boxes and stir for about three minutes.  Add seasonings to taste.
  5. Gently stir in the crab meat.  Mix in the boiled shells and pour into prepared baking dish.  Sprinkle bread crumbs over the dish and bake in the oven for twenty to twenty-five minutes.  Serve warm.

Save on Breakfast with Safeway

Being a stay at home mother is great but it also means our family has to survive on one income.  My husband works hard to earn a pay check and it’s my job to learn way and tricks to stretch those dollars to make sure our family has all our needs and even some of our wants.  It’s one of the reason’s I’ve started couponing and shopping based on sales.  I’m the Savings Queen of Stephensville (our house).  If I can’t save some money on something then I don’t want to buy it at all.  It’s important to save on everything our family uses, that includes clothes, household items, travel and food.  One way we save on food is by maximizing on supermarket sales, like the Buy 4, save $4 #BreakfastSavings promotion going on at Safeway and it’s affiliate stores.

To properly prepare for any grocery shopping trip I make sure I grab a sales circular and with Safeway I head online to my Just4U account.  I love their Just4U savings because I get personalized deals just for me based on items I buy often and I also get to see club specials just for my store.  I can also load digital manufacturer’s and store coupons on my card so I don’t have to worry about forgetting them during the check out process.  Once I’ve seen all the sales and match coupons with the items I plan to pick up for my family I head to the store ready to shop.  Before you go shopping make sure you clip any coupons you have and store them in a place you will remember when checking out.  Also you can read my article about Money Saving Apps to save you before and after you go shopping.

This trip we focused on ways to save on breakfast with Safeway.  Their current #BreakfastSavings sale made it so easy to get everything we needed for ourselves and we were also able to grab my mom some of her favorite coffee and creamer for a great price.  Since my husband has a long commute for work and he usually leaves the house at 5:30 AM, my focus is always finding quick, easy to eat, somewhat healthy and filling breakfast ideas for him since he’s eating in the car.  That’s why I was so excited to grab items he likes that will give him just the right amount of energy for starting his very long days.

Since the goal for us is always about saving money it feels so good going to the store and seeing the savings applied to my order and when I finished checking out I can see that we saved 48% on our bill by shopping the sale and also using a few coupons.  You can see more about my shopping tips to Safeway and see some of the great deals I found in store by visiting my Google+ #BreakfastSavings album.

When we have early mornings the kids just grab a quick breakfast of cereal and apple juice to give them some energy to get their days started.

This is my breakfast of choice while I am blogging today.  My tummy is already thanking me for the breakfast biscuits.  Just the right amount of energy to keep me going until lunch.  Now I should be able to do better about skipping breakfast when I am busy.  You can also see how other moms are saving on breakfast and ways they feed their families breakfast by visiting the site Rise and Shine with Savings.  You can also help share breakfast with other children.  All it takes is a quick tweet, share, pin or watch a video and you can help with reaching the goal.  So please take a few moments and click the banner below and share a breakfast today.

Winter Wardrobe Shopping with Cookie’s Kids

I have been saying that I need to get a new jacket for our toddler for over a month but I just haven’t gotten around to it.  As the holidays approached I figured it would just get done in the Christmas shopping especially since more stores put them on clearance around this time.  The weather hasn’t been really cold so I have been using his ski vest and a light jacket and he’s been fine.  However some how his ski vest vanished and the search for a jacket got much more urgent.  I logged on to the Cookie’s Kids website.  I was immediately surprised about the prices. They had great prices and so many different options for parents to choose buy for their children.  I immediately clicked in the winter section and found my toddler’s size and started looking for jackets.  Here’s the two I settle on.

Cookies Kids Jackets

I couldn’t believe the great price on them.  The blue one that has a grey hoodie and sleeves I really liked because it looked like a sweatshirt and a ski vest in one.  It was only $9.99, and it’s a great value.  It not too heavy so he can wear it on the days when its not super cold and windy and its fits him perfectly.  The grey jacket with the red stripes is a much thicker jacket and it has a great fleece lining.  I got it a size bigger so we can really bundle him up in it and it has the velcro on the arms so you can adjust it to fit his wrist better.  This one was only $12.99, a great value.  I have seen similar jackets at kids clothing stores for double that amount.  I’ve been very impressed with my Cookie’s Kids winter clothes order.  J.B looks great in his new winter jackets.  Check him out.

JB Jacket

I love this one on him so much.  The color looks really good on him and he is so comfy and warm in it.  He likes this one a lot.

Cookies Kids Grey Jacket

As you can see they both fit him great and he is always ready to go once he has his jacket on.  He’s trying to pull up the zipper himself.  This one was perfect for the windy day we had yesterday and his hood helps keep his hat in place so he doesn’t keep taking it off.  Speaking of hats, I also picked up a hat and gloves set for my oldest son as well.  It has his favorite character on it Buzz Lightyear.

trey hat

Yes he did forget about the gloves on the hat, he was just too excited about it having Buzz on it.  Another think I loved about shopping on the Cookie’s Kids website was the Alva Kids sizing tool.  If you are worried about shopping online because you can’t see the sizes of the clothes and you don’t want to get the wrong sizes, with this tool you don’t ever have to worry about that at all.  When shopping on the site and you click on an article of clothing, look for the Alva Kids icon.  It looks like this.

easy tool

When you click on the tool a pop up appears for you to either register so anytime you are on the site all your child’s sizing information it at your finger tips.

Sizing tool

You share information about your child and they tell you what size to choose in that item.  It refreshes and saves so the entire time you are shopping you have the correct size suggestions based on your input.  Now you don’t have to worry about buying the wrong sizes any more.

The History and Growth of Cookies Kids.

In 1972, a young man named Cookie and his brother Marvin went into business together. They rented a 1600 square foot store in Jamaica, Queens, fixed it up, bought inventory in Summer and Fall, and opened a day after Thanksgiving with a full stock of holiday toys. The toys were a success and they put the extra money toward buying children’s clothing for the next season. When that did well, they bought more clothing. The business was on it’s way.  As the brothers Cookie, Marvin and Sonny, who had come in as a third partner in the business, began to open new stores in new locations, inventory expanded. Besides the latest fashions, our customers wanted shoes, toys, backpacks and accessories and we were prepared to deliver.  By the late 1990’s there were six superstores throughout the NYC area, and though they previously had different names, by that time they were all named Cookie’s Kids. Also in the late ’90s came an important addition to Cookie’s Kids’ inventory: school uniforms. It was the steady success in uniform sales that paved the way for founding CookiesKids.com in 2007, which originally sold uniforms and soon after the entire Cookie’s Kids Inventory.

If you want to find out more about the Cookie’s Kids brand then visit their website, like them on Facebook or follow them on Twitter.  Plus if you live in the NY area you can visit one of their seven store locations in Bronx, Brooklyn and Jamaica.

I’m A Huggies Mom

As an experienced mother of three I can say with confidence that I have done my diaper research and that’s why I am a Huggies Mom.  When I had my first child I tried so many different brands, even store brands to find something that would work great for us and I’ve quickly found that with diapers it’s not about the price, you have to focus on quality.  My choice is Huggies Snug and Dry Diapers.  They were my go to with my older children and I always recommend them to my other friends and family members.  Especially with my third child, he is a toddler and he is very active and we need a diaper that can move with him, keep him dry, keep away rashes and stop leaks in their tracks.

Huggies diapers are great to give as gifts to new mothers and pregnant women at baby showers.  You can never have enough diapers and one thing and new moms use the most is diapers.  Gifting Huggies is giving a trusted brand that parents can rely on and you know that its a great product for baby.  They offer them in so many different packs and boxes so gifting is easy for anyone on any budget.  Plus you can look up creative ideas online to make them into beautiful diaper cakes.  Here’s a link to a great tutorial I found online.  These are a fun and creative way to gift diapers but you can also just wrap up the boxes or place the packs in gift bags for gifting as well.  The lucky recipient will be so happy to not have to worry about buying diapers and they are going to love the super cute design.

When shipping for your diapers be sure to check out your newspaper and online for coupons and right now Walmart has the giga packs on rollback for only $22.99.  That’s a great value and it could be even better if you find a coupon to pair with their amazing sale price.

I was so excited when I got my box in the store and noticed that it was special pack.  It had some extra goodies inside for me.

My box had two diaper samples for the Huggies Little Movers slip-on diapers and a $2.00 off coupon for me to use if I do decide to buy them after giving them a try.  You can view more photos from our shopping trip to Walmart here.

I especially love using Huggies Snug and Dry because they are so great with our toddler overnight.  Since using them we haven’t had any nights or morning that he wakes up and the bed is wet and neither is his clothes.  I can rest assured that when I put on that diaper on him at night no matter how wild he sleeps, how much he turns or tosses that diaper will stay secure on him and he will be free of diaper rashes and wet clothes.
